Everyone has one quick 5 minute recipe that can really hit the spot when starving. This is mine!. Before, if I was getting ‘hangry’ I would always end up with a quick sandwich … even though I knew it would leave me bloated and craving more beige food, it was a handy quick snack if I didn’t have much time on my hands. How times have changed! this recipe literally takes the same amount of time as making a toastie but contains more goodness and flavour.

INGREDIENTS TO MAKE ABOUT 12 BHAJIS
2 onions (ends trimmed)
100 g of gram flour (chickpea flour)
1/2 tsp baking powder
1/2 tsp chilli powder
2 tbsp chopped fresh coriander
1 tsp pink salt
1 tsp ground cummin
1/2 tsp turmeric
1 tbsp EVOO
1 tsp lemon juice
5-6 tbsp of water
Some olive or coconut oil for frying.
METHOD
If you have a spiralizer, spiralize the onions. Otherwise chop them julienne style thinly and evenly. Place the flour, baking powder, spices, lemon juice and extra virgin olive oil in a bowl and mix well. Add the water one tablespoon at a time to make a thick batter. Add the onions and coat them with the batter.
Heat the oil in a small pan and drop carefully a spoonful of the mix into the oil. Cook for 2-3 min in each side. Once cooked, drain them on some kitchen paper and serve with a vibrant green salad.
